There has been a surgence of upscale dining in international airports as of late. Much of this attributed to the “foodie” culture that continually gains traction and increased layover times at airports post-9/11. It’s no surprise that renowned chef stars are trying to get real estate in this market. Gordon Ramsay, Andrew Carmellini, Heston Blumenthal, and Rick Bayless among many others have already tapped this resource and their seemingly thriving. They bring diversity and interest to the airport food court which commonly has fast-food joints.
